Pumpkin Parmesan Gnocchi

I love fall for one reason, pumpkin spiced foods!  I can’t get enough of them and recently was excited to find pumpkin gnocchi in a local store.  The pumpkin gnocchi added a tasty twist to an ordinary gnocchi dish.

Pumpkin Parmesan Gnocchi:

1 package (500g) Siena Arte Homemade Style Pumpkin Gnocchi
1 half package vegan pepperoni
1/2 cup vegan Parmesan
1 small onion diced
2 Tablespoons vegan butter

Pan fry butter and diced onions until caramelized
Add half package chopped pepperoni
Boil gnocchi per instructions
Put gnocchi in sieve, dry and add to pan
Continue to fry until crispy (15 minutes over medium heat, continue to stir)
Add Parmesan

Serve!

Note:  I found Siena Arte in my local TJ Maxx.  It’s an Italian company and can hopefully be found online.

Need a good kick in the butt?  For a fast healthy energy boost, try this organic green smoothie!

Kick Your Butt Greens Recipe:

1 handful of kale, spinach, or any green that you fancy
2 large stalks of celery
1 large carrot
1 apple
1 tablespoon almond butter or any nut butter
1 tablespoon cold pressed coconut oil
Add some water (depending on consistency desired)

Fill your blender and juice up!  You can drink the smoothie throughout the day for a good kick in the butt nutritious energy boost!
