Maitake Mushrooms with Basmati Rice

When the weather turns cold, our minds turn to the indoor Farmer’s Market here in Stevens Point. And our absolute favorite vendor is Segura & Sons Mushrooms.

While we often think about mushrooms for hearty stews, Jerome had Maitake mushrooms that we just had to try! This is a simple stir fry with just a handful of ingredients that really help the mushrooms shine with a great consistency and hearty flavor. We served ours with a side of grilled cauliflower, brussel sprouts and carrot curry.

Ingredients

  • 1/2 pound maitake mushroom, cleaned
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 1 tsp soy sauce (we used dark mushroom from Pearl Bridge)
  • 1 tbsp lemon juice

To Prepare

Heat oil over high heat. Add garlic and fry quickly until golden brown, 1 minute.

Add maitake mushrooms, and cook until water escapes from mushrooms, and fully evaporates.

Add soy sauce, and lightly salt and pepper to taste.

Finish with lemon juice, and serve immediately over basmati rice.
