Blueberry Pie on the Grill

This simple berry pie is perfect for summer when you have a taste for pie, but don’t want to heat up the oven!

Ingredients

1 frozen pie shell
3 cups frozen berries
3 tbsp corn starch
¼-⅓ cup sugar
lemon juice, from half

2 tinfoil pie pans

To bake

Allow berries to thaw, remembering that frozen berries contain a lot of moisture. Drain excess moisture.

Place pie shell out to thaw, approximately 10-15 minutes.

Prepare your grill so that the temperature is as close to 350 degrees as possible.

In a large mixing bowl, combined drained berries, corn starch sugar (to taste), and lemon juice. Gently pour into pie shell, which should be in the first tinfoil pie pan.

If you are using a charcoal grill, move charcoal briquets off to the side so that heat is indirect (you don’t want to burn your pie).

Place an empty, inverted pie pan on the center of the grill. Then place the pie in a second pie tin on top of the inverted pan. The goal is to bake indirectly.

Check pie after first ten minutes to make sure it isn’t burning. Check every additional 10 or so minutes, and remove at approximately 30 minutes.
