Fiddlehead Fern Egg Scramble with Mozzarella

This is a quick spring-time scramble. If you can’t get fiddlehead ferns, substitute asparagus or spinach.

Ingredients

¼ cup onion
¼ green bell pepper
1 clove garlic
1 cup fiddlehead ferns
¼ cup oyster mushrooms (or as available)
4 eggs, beaten

¼ cup mozzarella cheese, sliced or grated

½ cup vegetable broth
salt and pepper, to taste

Preparation

In a medium-sized pan, heat vegetable broth to boiling. Add onion, bell pepper, garlic, fiddlehead ferns* and oyster mushrooms. Cook until ferns are tender, approximately 10 minutes. Add vegetable broth, if necessary.

Drain any remaining liquid, and cook until mostly dry. Add eggs and scramble.

Top with mozzarella cheese and cover until melted.
