
Ingredients, Salad
1 large fennel bulb, thinly sliced
½ medium onion, thinly sliced
½ bell pepper, cubed
1 tangelo or other orange, cubed
1 small tomato, diced (optional, garnish)
¼ cup feta cheese, crumbled (optional, garnish)
Ingredients, Dressing
2 tbsp sugar
1 tsp salt
black pepper, to taste
½ cup vinegar
½ cup water
In a small bowl combine all salad ingredients, minus optional items for garnish.
In a separate bowl, combine dressing ingredients. Stir well.
Combine ingredients. Refrigerate at least 2 hours. Garnish with feta cheese and tomato and serve.
