Earlier today, we wrote about going to the Farmers Market and discovering a new mushroom called Lions Mane. If you haven’t had Lions Mane before, note that they taste a lot like delicate fish, and are absolutely wonderful on the grill with green onions or scallions.

Spices
3 cloves garlic, diced
salt and pepper, to taste
Ingredient List
6 scallions, thickly sliced
Olive oil
Lions Mane mushrooms (approx. 6 oz)

Preparation
Preheat oven to 350 degrees.
Slice Lions Mane mushrooms against the grain into thick slices. Drizzle with olive oil and gently stir in garlic salt and pepper.
Bake in oven for approx. 10 minutes. This will greatly reduce the size of the mushrooms, but cook out excess moisture so that they grill up better.
On a sheet of tinfoil, layer mushrooms and scallions. Grill over medium heat for 4-6 minutes. Serve immediately. Excellent served with grilled brussel sprouts.
