Fall Farmer’s Market Find: Lion’s Mane Mushrooms

We spent some time this morning at the farmer’s market. Our plan: fennel bulb, onions, potatoes and tomatoes. We did pretty well but it was too late in the season for fennel bulb (see our fennel salad recipe).

As we reached the half-way point, we had seen all of the typical end-of-season vegetables and could see the transition to Fall. But we also spotted a surprise: the mushroom farmer was back!

The farmer had oyster, hen-of-the-woods, chicken and an assortment of other fresh mushrooms that I have had before. I’ve enjoyed all of them.

But there was a new one: Lion’s Mane! (hericium erinaceus)

We were told that it sautes nicely and tastes like crab. We haven’t decided on a recipe yet, so stay tuned later tonight! We have fresh peppers, green onions and baby brussel sprouts. And the weather is nice, so expect something fresh and grilled.
