Mushroom BLTs?

At today’s Farmer’s Market in Stevens Point, Segura and Sons had some gorgeous pink oyster mushrooms! Nothing says summer quite like a BLT with fresh tomatoes. Here’s our version with a twist on using the pink oyster mushrooms as vegan bacon that is super delicious!

Ingredients
1 bunch pink oyster mushrooms

1 tsp rosemary garlic salt
3-4 drops liquid smoke

Directions

Over medium heat on a griddle, cook oyster mushrooms until crispy. Do not add any oil to the pan. Take your time: 5-6 minutes a side. Sprinkle with rosemary garlic salt. Turn off heat.

Sprinkle a couple of drops liquid smoke directly onto the hot griddle, and cover. Allow the pan to sit for a minute so that the smoke evaporates.

Serve over fresh lettuce (or spinach), tomato.
