Barbecued Pumfo with Fonio

Looking for something a little unique and different? Remember that you don’t always need a recipe–sometimes a few ingredients can make all the difference. This plate came together in 10 minutes tonight and was a lot of fun!

The Stir-Fry: cubed pumfo dusted with smoked paprika, all-spice and chili powder, then sauted in olive oil, about 3-4 minutes a side until browned.

The fonio cooks up and tastes a lot like couscous. I dropped in some onion and bell pepper, peas, then a pinch of saffron (remember to grind it, and soak it briefly in hot water).

The condiments and sauces for the pumfo:

  1. Adjvar
  2. Seeds of Paradise
  3. Sour Cream
  4. Barbecue sauce with hot sauce mixed in.

Oh, and home made pickles to just round everything out!
