
Looking for something a little different, we tried a vegan version of shredded meat tacos. We used dried lion’s mane for our tacos, but fresh or dried will do.
Ingredients
Dehyrdrated lion’s mane mushrooms
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
½ tsp oregano
½ tsp cumin
½ tsp chili powder
1 tsp honey (infused with cinnamon)
½ tsp olive oil
½ onion, diced
1 tomato, diced
2 tsp bell peppers (or bell pepper paste)
Rehydrate lion’s mane for at least 30 minutes, then bring to a boil. Be sure to use all of the liquid (at least one cup). The liquid will thicken as the mushroom’s cook.
When cooked down, add onion and oil, and saute briefly. Add spices, remaining ingredients and additional water (if necessary). Simmer until tomatoes are cooked.
We served ours over tortilla chips with vegan sour cream, shredded cheese and black olives with sides of rice and refried beans.
