Heart of Palm Spaghetti

If you haven’t heard about it yet, check out heart of palm spaghetti.

We served it tonight with stir-fried veggies (multi-colored carrots, green beans, broccoli, and a little bit of garlic) and rounded it off with our favorite spice blend, Fox Point (from Penzeys).

The “spaghetti” just gets a quick rinse in the sink, and then heated with the veggies: no boiling!

And the verdict? The texture and look is spaghetti-like, but the taste is more veggie. But it’s low fat, low carb and high protein, and it paired well with the stir-fry!
