Banana Blossom Fish and Chips with Mango Tartar Sauce

We thought we would try something completely new tonight. The banana blossoms and nori have the same texture and flavor of fish.

Fish

The fish is banana blossom, which you can find online. Note that it is packed in salt brine, so be sure to rinse it well before using it.

The blossoms have remarkably good texture, and are firm. Perfect for deep frying!

Ingredients – Dry Batter

1 cup flour
½ tsp garlic powder
1 tsp dill
½ tsp dill
1 sheet nori (seaweed), crushed into small pieces or powder

Mix together dry ingredients in a small bowl and set aside.

Ingredients – Wet Batter

1 cup flour
½ cup tonic water
½ tsp salt
½ tsp turmeric
2 tbsp pickle juice

Mix together ingredients and set aside

Ingredients – Fish

2 cans banana blossoms, rinsed
oil for deep frying

In a large cast iron skillet or pot, add enough oil to completely cover fish. Heat until a small amount of the wet batter sizzles instantly upon contact.

Dredge banana blossoms in dry batter first, then wet batter. Place only a few pieces in the hot oil and deep fry. Gently rotate fish pieces after about a minute.

Mango Tartar Sauce
½ cup veganese
2 tsp mango chutney

mix together, and refrigerator for at least thirty minutes
