Oyster Mushroom, Fresh Vegetable and Black Garlic Stir Fry

Ingredient List

2 tsp oil
¼ red onion, sliced
1 clove black garlic, minced

½ c. diced carrots
½ c. sliced cauliflower
½ c. quartered brussel sprouts
½ c. spinach
¼ c. cashews
¼ c. raisins

4 oz. oyster mushrooms
1 c. vegetable broth

2 tsp. mushroom powder
1 tsp. cilantro
salt and pepper to taste

Preparation

Saute onion and garlic in oil, until onion begins to brown.

Add carrots, cauliflower and brussel sprouts, along with ¼ c. vegetable broth. Cover, stirring occasionally. Add vegetable broth ¼ c. at a time to prevent sticking.

Add oyster mushrooms, mushroom powder, cashews and raisins and cook additional 5 minutes. Add any remaining vegetable broth, cover and cook until broth thickens.

Add cilantro, salt and pepper to taste.

Stir in (or serve over) rice.
