Black Garlic, Shitake and Spinach Hash

A hearty hash for a late winter meal!

Ingredient List:
4 cloves black garlic
½ cup vegetable stock
½ onion, diced
4 medium potatoes, peeled and thinly sliced

1 cup spinach
1 lb Beyond Burger

2 tsp rosemary, dried
salt and pepper to taste

Preparation:

In a lightly oiled pan, fry potatoes for about 5 minutes.

Add onion, mushrooms and garlic. Continue cooking until potatoes begin to brown. Add vegetable stock as needed to prevent sticking.

Add Beyond Burger, break apart and brown. Add spinach and cook until wilted.

Add rosemary, salt and pepper.

Add hot sauce to taste.

Served with a side salad of apple, carrot and raisins.
