Beef Wellington (Vegan)

We found quite a number of recipes for vegan Beef Wellington, but ended up creating our own!

Ingredient List

1 lb Beyond Burger
1 sheet puff pastry

1 rib celery
1 carrot, finely chopped
2 garlic cloves, minced
½ medium onion
butter or oil

1 tbsp vegan worcestershire sauce
1 tsp sage, dried
1 tsp thyme, dried
½ tsp rosemary, dried
salt and pepper, to taste

Preparation
Preheat oven to 350 degrees.

Over medium heat, melt butter (or heat oil), and saute celery, carrots, garlic and onion, until tender.

Add worcestershire sauce, sage, thyme and rosemary. Salt and Pepper.

Add Beyond Burger.

Flatten out puff pastry, and fill with burger mixture. Seal ends of puff pastry. Score top with slits to vent, every inch or so.

Bake for 30 minutes, or until golden brown. Let sit for five minutes, slice and serve.
