
When we bought pink oyster mushrooms earlier today, we were told that if you fry them up they would taste just like bacon.
I was skeptical.
There are a couple of tricks to making this work but these pink oyster mushrooms made one of the greatest BLT sandwiches I think I’ve ever had. Note: it’s Wisconsin, so the “L” turned into a “C”!
Ingredients
4 oz pink oyster mushrooms, cut into strips
2 tbsp olive oil
ΒΌ sweet onion
1 clove garlic, diced
salt and pepper
Bread
Cheese slices (one of us tried pepper jack, and the other tried smoked gouda)
Tomato slices
Mayonnaise (one of us used plain, and the other tried pesto mayonnaise)
Preparation
Heat olive oil until it lightly sizzles. Add oyster mushrooms. When they begin to brown, add onion and garlic. Fry until mushrooms are crispy. Salt and pepper to taste.
Note: If you want to achieve the best bacon flavor and texture, be sure to fry until crispy, about 20 minutes (the mushrooms throw off liquid) and be sure to salt generously and pepper.
