
Today was pretty gloomy here: snow, then ice, then wind and ice. We were looking for comfort food
For both of us, nothing says comfort more than mashed potatoes and gravy. This is a fun twist on Shepherd’s Pie.

Spices
1 tsp salt
1 tsp ground sage
1 tsp thyme
½ tsp white pepper
Ingredient List
½ medium onion, diced
½ bell pepper, diced
3 stalks celery diced
2 carrots, finely diced
4 cloves garlic, minced
1 oz porcini dried mushrooms, rehydrated (or whatever is available)
1 lb Beyond Burger (Beyond Burger)
3 tbsp tomato paste
2 tbsp Bragg’s Amino Acid (or Worcestershire sauce)
½ cup bread crumbs
Phyllo Dough sheets
Preparation
Preheat the oven to 400 degrees.
Combine spices and set aside.
Over medium heat, gently saute onion, pepper, celery, carrots and garlic, approximately 4 minutes. Add porcini mushrooms and cook for 2 more minutes.

In a bowl, combine vegetable mixture, Beyond Burger, tomato paste, Bragg’s and bread crumbs.
In a lightly oiled casserole dish, add a layer of 3-4 sheets of Phyllo dough, hamburger mixture. Repeat. Brush top with melted butter.
Bake for 30 minutes. Allow to cool for 5 minutes. Serve with mashed potatoes and porcini gravy.
