Gyro Shells with Tzatziki Sauce (Vegan)

Tzatziki Sauce

Ingredient List

1 cup sour cream (Tofutti)
1 cucumber, seeded, grated and drained
½ lemon, squeezed
1 tsp dill
1 tsp olive oil
2 cloves garlic, finely diced
Salt, to taste
Sugar, to taste

Preparation
Combine ingredients in a bowl. Refrigerate over night, or at least 4 hours. Serve over gyros.

Gyro

Ingredient List
1 lb Hamburger (Beyond Burger)
¼ onion, diced
1 tsp cumin
1 tsp oregano
1 tsp onion powder
1 tsp garlic
¼ lemon, squeezed

Preparation
Fry hamburger and onion until onion is translucent. Add spices, drizzle with lemon.

Gyro Shells
1 taco shell (gluten free)
Black olives
Feta cheese
Shredded lettuce
Diced tomato
Tzatziki Sauce (recipe above)

In shell, line with shredded lettuce. Layer gyro meat, then olives, feta and tomato, to taste. Drizzle with Tzatziki sauce and serve.
