Plant-Based Breakfast Scramble

We started out our Saturday morning at the Farmer’s Market here in Stevens Point, and found some colorful, fresh bell peppers and sweet onions.

What better ingredients to round out a tasty breakfast bagel.

Normally, Tim thinks about these recipes in the context of being Vegan. But this one is truly different: vegan or otherwise, this is far and above the best breakfast bagel we’ve ever had!

Ingredient List
Bagel, Sesame and Poppy seed, lightly toasted (O’ Dough’s Vegan Bagels)
JUST Egg, Plant Based Scramble (Just Egg)
Pure Farmland Sausage (Farmland)
Smoked Provolone slices (Miyokos)
¼ cup bell pepper, diced
¼ cup sweet onion, diced
1 tsp olive oil

Preparation
Over medium heat, cook sausage, approximately 4 minutes per side until browned and cooked through.

Heat oil over medium heat and saute peppers and onions until tender. Add ½ cup (2 servings) JUST Egg, and scramble. Top with provolone.

Toast bagel. Top with sausage and egg scramble and serve. Salt and pepper to taste.
