Turmeric Stir Fry with Shitake Mushrooms

This is a unique stir fry. When we were preparing it, we wondered why ground hamburger was such a rare ingredient in stir frys. We had some Beyond Burger and thought we would give it a try! We think you’ll like the results!

Ingredients
Baked tumeric Tofu, 8 oz
Sliced carrots
Broccoli florets
¼ Yellow onion, sliced
½ Green bell pepper, diced
¼ cup fennel bulb, thinly sliced
3 tbsp turmeric curry paste
1 tbsp soy sauce
¼ cup water
¼ lb Beyond Burger (Beyond Burger)

2 tbsp olive oil
1 tsp sesame soil

Lime rice

Preparation
Pre-heat olive and sesame oil over high heat.

Quickly stir try carrots and broccoli. Reduce heat to medium.

Add remaining ingredients, except soy sauce, turmeric paste and water. Cook until Beyond Burger is browned.

Turn heat to low, add soy sauce, turmeric paste and water. Cover and simmer for five minutes or until vegetables are tender.

Serve over rice.
