Turmeric Tofu Stir Fry with Shitake Mushrooms


Spice List
1/2 tsp white pepper
soy sauce (optional)
hot sauce (optional)

Ingredients
2 tbsp extra virgin olive oil
1 tsp minced garlic
8 oz baked turmeric tofu
1/2 purple onion, thinly sliced
6 oz shitake mushrooms, thinly sliced
2 large carrots, sliced
1/2 lime, juiced

Preparation
Heat olive oil in skillet or wok. Briefly stir fry garlic for one minute. Add onion, cook 1-2 minutes. Add shitake mushrooms and cook for another 1-2 minutes.

Add carrots, and tofu. Cover. Cook for 5-7 minutes until carrots are tender and tofu browns. Stir occasionally. Add lime juice, and a small amount of soy and hot sauce to taste.

Serve with white or brown rice.
