
We got home late this afternoon from biking, and were starving. But we also wanted scalloped potatoes. So this is a quick stovetop version that turned out pretty well.
Ingredients
1 tbsp olive oil
1 1/2 lb white potatoes
1 lb Beyond Burger (Beyond Burger)
1/4 purple onion, diced
1 medium green bell pepper, diced
2 cloves garlic, diced
8 oz alfredo sauce (Victoria Fine Food – vegan)
Preparation
Heat olive oil in skillet over high heat. Add potatoes and cook for 4-5 minutes. Add onion, bell pepper and garlic. Cook for an additional 1-2 minutes.
Add Beyond Burger, cover and cook until potatoes are tender, approximately 4-5 minutes. Stir often.
Stir in alfredo sauce and serve.
Serve with fennel and pepper salad.
