
Ingredient List
1 package gnocci
1 tbsp olive oil
1/2 medium onion, diced
vegan pesto (Legnano)
1/4 lb hamburger crumbles (Beyond Burger)
grated parmesan (Violife)
salt and pepper to taste
Preparation
In a large pan, bring water to boil. Boil gnocci approximately 3-4 minutes, or until they float. Drain.
In a large skillet, heat olive oil. Sautee gnocci until they start to lightly brown. Add onion and sautee for 1-2 minutes. Add Beyond Burger crumbles. Cook for an additional 1-2 minutes.
Gently stir in pesto until gnocci are lightly covered.
Serve. Garnish with grated parmesan. Salt and pepper to taste.
