Vegan Feta Meatloaf

Dinner Suggestion: Mashed Potatoes, Gravy and Green Beans

The Spices
1 tbsp paprika
1 tbsp dry mustard
1 tsp basil
1 tsp thyme

1/2 tsp black pepper
1/2 tsp garlic powder
1/4 tsp white pepper


1 tsp salt (optional)

Ingredient List
2 tbsp butter or butter substitute
1 cup onions, chopped
1/2 cup bell peppers, any color
2 bay leaves
1/2 cup tomato sauce
1/4 cup almond or soy milk (Silk)
1 lb vegan hamburger (Beyond Burger)

4 oz feta cheese (Violife)
1 egg, replacement egg (Neat Foods)
1/4 cup bread or panko crumbs
Cooking oil spray

Preparation
Preheat the oven to 350 degrees.

Combine the seasoning mix ingredients in a bowl and set aside.

Melt the butter in a skillet. Add the onions and cook until golden brown. Add the green peppers, bay leaves and 1 tbsp of the seasoning mix. Cook and stir occasionally for about 5 minutes. Add the remaining seasoning mix and cook until browned. Remove from heat and discard the bay leaves.

Combine the tomato sauce, almond milk, and the vegetables and any juice from the skillet.

In a separate bowl, combine the meat, cheese, and bread (cracker) crumbs. Combine with the vegetable mixture.

Spray a 9-inch loaf pan with cooking spray. Add the meat mixture to the pan and mold it into a loaf.

Bake 30 minutes. Rotate pan 180 degrees and bake another 15 minutes. Remove from oven and allow to set for 10 minutes.

Cut into slices and serve.
