Fried Green Tomatoes and Gravy

Spices
1/2 tsp garlic powder
1/2 tsp paprika

1/2 tsp white pepper
1/2 tsp cumin

Ingredient List
2 medium, firm green tomatoes
Salt
1 cup almond flour
1/2 cup soy milk (Silk)
1 egg substitute (Neat Foods)
1/3 cup cornmeal
1/2 cup panko bread crumbs
1/4 cup extra virgin olive oil

hot sauce (optional)
Lebanese garlic pesto (Toom Dips)

Preparation
Slice tomatoes into 1/4 inch slices, lightly salt and let sit while you prepare the dipping mixes.

Combine spices with flour.
In a separate bowl, combine egg and soy milk.
In a third bowl, combine cornmeal and breadcrumbs.

Heat extra virgin olive oil. Dredge tomatoes in 1) flour, 2) milk and 3) breadcrumb mixes.

Fry 3-5 minutes per side until golden.

Serve immediately with hot sauce, pesto or skillet gravy.
